What You Will NEED:
2 x fresh or frozen lobster tails about 170-200g each
1 x Street BBQ Tuscan rub
100g butter (soft)
3 cloves peeled garlic
1 teaspoon chopped parsley or basil
1 lemon cut in half
Drizzle of Cobram Estate extra virgin olive oil (I used lemon)
RECIPE
Get you desired BBQ hot.
Using a serrated knife cut through the underneath of each lobster until you hit the shell. Prise each of the lobsters open until it flat revealing the lobster meat on each side keeping in the shell.
Make the garlic butter by smashing up the garlic and stirring in the butter, herbs, a little Street BBQ Tuscan rub and ½ the lemon juiced.
Liberally sprinkle the inside of the lobster with Street BBQ Tuscan then add the butter, let sit for 1 hour in cool place ( not the fridge) to set a little.
Drizzle the lobster all over with oil coating the shell with oil using your hands to massage in then place on the hottest part of the BBQ.
Grab yourself your favourite beer or glass of vino, Once you see the butter start to melt move the lobsters to a less hot spot and shut the lid for 5 minutes.
Open the lid, place the lobster back on the hottest part for 1-2 minutes more until it is cooked through.
Serve with wedges of lemon and a smoked potato salad.
